The column still rum production process begins with the distiller heating a mixture of fermented sugar cane juice and water until it boils. The vaporized alcohol rises up the first column, or analyzer column, where it is separated into components based on their volatility (boiling point). Low-volatile compounds are pulled off at the top while higher-volatile compounds are pulled off at the bottom. This separation of components allows the distiller to control what type of rum they produce, as they can make cuts based on how much congeners (flavor and aroma compounds) are included in each cut.


In terms of the overall production process, there are a few common steps that all rum makers follow. The first step is to make a mash with molasses and water. The mixture is then fermented and distilled multiple times to produce the desired strength of alcohol in the final product. After distillation, the rum is matured in oak barrels for anywhere from a few months to several years. This ageing process allows the rum to develop its unique flavor and character. Finally, the rum is blended with other rums of varying ages or flavored with herbs, fruits, and spices before being bottled for sale.

I had learned about Bambarra rum on this forum, so we drove to The Wine Cellar to buy some on our first day there.


The least expensive beer available in the Turks and Caicos is local Turks Head purchased by the case at the brewery. Turks Head is typically more expensive when purchased elsewhere.FOTTAC (Flavors of the Turks and Caicos, a shop) at the Regent Village in Grace Bay typically offers the best prices of Bambarra Rum (locally blended) and other spirits.


The best prices on local beer is found at the TC Crystal shop, which is located adjacent to and is associated with the Turk's Head Brewery. Beer is typically at least $10 less per case than anywhere else. They also stock canned and bottled drinks such as the Osprey Chill and Bambarra mixed drink products.


Bambarra was officially launched just four years ago (November 2008) becoming the very first rum to be blended, bottled and labeled in the Turks & Caicos. Oh there was something called Cave Rum that preceded Bambarra, but that was essentially produced in total elsewhere, then labeled and marketed as a Turks & Caicos product.

Just got back from Grand Turk. Bought 2 bottles of Bambarra Rum at the duty free shop. They boxed it and we brought it back to the ship where it was taken and delivered to our room the night before debarkation. Bambara rum as far as we know can only be bought in Turks and Caicos so I can't compare prices. We got two bottles for $42. Will last a long time .
